Menu Plan Monday - January 28,2013

Three years ago today I started this blog with no idea as to what to do with it.  Three years later and I'm still trying to figure it out.  For the folks that have stuck with me these three years and for anyone who has found me somewhere along the way, I thank you very much.  If you would like to go back to that first post, please visit Freezer Cooking Day.  On to this week's menu plan.


Monday - Turkey Burgers, veggies, oven roasted potatoes

Tuesday - Pasta primavera

Wednesday - Goulash (Miss D's request)

Thursday - Pizza

Friday - Roasted Chicken Shawarma with Schug (kind of obsessed with schug right now), challah, roasted veggies, soup?

Menu Plan Monday - January 21, 2013

A day off from school today for the kids.  Still pretty cold in the morning, but it's supposed to warm up to the 60's by the afternoon.  I'm feeling better today, so hopefully this week I can get some projects around here done.  Other than that, mostly just another crazy busy week around here.

Menu Plan

Sunday - Pretzel dogs  whisky carrots

Monday - Leftover spaghetti and meatballs

Tuesday - Broccoli Cheddar soup, bread bowls?

Wednesday - Baked Tilapia, zucchini fries, recipe similar to this one, except I will oven "fry" them.  Drizzle with EVOO and bake in a 400 degree oven for about 10 minutes.
Thursday - Homemade Pizza

Friday - Tu B'Shevat menu:  Challah, Roasted Pomegranate-Glazed Chicken, Couscous with almonds and dried fruit.  veg? maybe roasted butternut squash, sticky toffee cake  This is a new recipe, so I will make substitutions using coconut oil/milk for the butter/creme ingredients and see how it goes.  I received this book last month and I can't wait to cook something from it! So the sticky toffee cake is the first to try.

Chewy Chocolate Chip Granola Bars



Chewy Chocolate Chip Granola Bars
yield: 20 bars


I have made this recipe several times and the kids always gobble them up.  I think next time I will try substituting raisins for the chocolate chips and mixing them into the granola mixture directly.  I'll update the recipe when I try that variation.  

Ingredients:
1/2 cup (1 stick) butter
1/2 cup honey or maple syrup
2/3 cup packed brown sugar
4 cups quick cooking oats
2 cup crispy rice cereal
1 teaspoon vanilla
1/4 cup mini chocolate chips

Directions:
In a large bowl, stir oats and rice cereal together. Set aside. In a medium pot, melt butter, honey (or maple syrup) and brown sugar together over medium high heat until it comes to a boil. Reduce the heat and cook 2 minutes. Off the heat, add in vanilla and stir. Pour over dry ingredients and mix well to moisten all ingredients. Pour into lightly greased quarter sheet pan (12"x9"x1").  Press out the granola mixture evenly in the pan, making sure to pack them down so they stick together. Sprinkle with mini chocolate chips and press down lightly. Cool on the counter top to room temperature for at least two hours or until the chocolate chips are set before cutting into bars. You can speed up the process by putting them in the refrigerator.  Cut into bars and wrap in parchment or plastic wrap.
I made a double batch for a school event and I'm glad I did!
 This recipe is very easily doubled for a larger batch, just use a half sheet pan (12"x18"x1").

Menu Plan Monday - January 14, 2013

Where did 2012 go?  I realize it's been over two months now since my last post.  No excuses for it.  Just the normal crazy busy life that gets even more so as the end of the year approaches.  Add in a bit of stomach flu/ cold flu/ creeping crud that just wouldn't quit.  I would say that it's behind us, but today I feel under the weather again.  I'm hoping it doesn't develop any more.  That is why today I am trying to rest (and blog).  There are so many recipes and posts I have been meaning to get to, but just haven't taken the time to do so.  There have been birthday parties and holidays, food gifts and all sorts of projects to share.  I am hoping to catch up a bit in this second part of January.  Okay, so on to this week's menu plan:

Monday - Fish tacos, avocado, homemade salsa

Tuesday - Broccoli and bowties

Wednesday - Turkey meatloaf, sweet potato oven fries

Thursday - Homemade Pizza

Friday - Spaghetti and meatballs, challah
