Menu Plan Monday - 9/26/11 - Rosh Hashana Menu

Ok, the holidays are approaching quickly (tick-tock), so I'm just writing a quick list for the week.  A few of the recipes have links, but mostly these are the family recipes that I haven't posted on the blog.  If you are curious for a recipe, I'll try to post it for you (if I get permission to share - hehe!)

Sunday - Mojo grilled chicken and roasted cauliflower with garlic.

Monday - Baked Huevos Rancheros.  Not sure if this will be too spicy for the kids, so probably will heat up some veggie corn dogs (the Morningstar Farms ones), just in case.  Cheesy mexican rice.

Tuesday - Homemade Mac and Cheese , salad

Wednesday, Thursday, Friday  - My Rosh Hashana Dinners Menu (in no particular order as I'm not sure what I'll serve for each night, but here's the plan so far)

YomTov Challah (with honey and vanilla)
Matzo Ball Soup
Gefilte Fish/horseradish
Mock Chopped Liver (maybe?)
Roasted Eggplant Spread
Aunt Babe's Brisket
Baked Apricot Chicken
Carrot Rutabaga Puree
Potato Souffle with caramelized onions/mushrooms
Couscous with dried cranberries (w/pomegranate) and almonds

Menu Plan Monday - 9/19/11

Another busy week here with Nutcracker rehearsal, dance class, soccer practice and the first game.  Not feeling much inspiration this week.  Actually didn't even think I would post this today, but here I am.

Sunday - Baked chicken eggrolls, veggies, quinoa

Monday - Fish Tacos

Tuesday - Baked ravioli casserole

Wednesday - Asian Chicken salad and noodles. Peanut dressing on the side for us, sesame dressing for the kids.

Thursday - Homemade pizza

Friday - Chicken?? and Challah (the last "regular" batch before I start making the Yom Tov Spirals)

Menu Plan Monday - 9/12/11

Keeping this post short.  Feel like I'm behind and it's only 8:45 on Monday.  I'm hoping to feel more caught up soon and post some recipes. 

Monday - Crock-pot Roast with onion gravy, carrots, potatoes

Tuesday - Ravioli (frozen) and marinara sauce, veggies and dip.

Wednesday - Shredded Beef (from the roast) Tacos, avocado, tomatoes

Thursday - Pizza and Veggie lasagna (from the freezer)

Friday - Roasted chicken, veggies, Challah

We were out for a drive this afternoon and stopped at a road-side stand for some tomatoes and a watermelon.  I just knew where these tomatoes were destined...bruschetta.  So yummy!!!

I cut up one of my homemade baguettes.  Drizzled some garlic olive oil and sea salt on them.  Crisped them up in the oven for about 10 minutes (350 F).  In a bowl I mixed the topping for the bread:

2 tomatoes seeded, and diced

about 8 small leaves of basil, chiffonade

about 2 cloves of garlic, minced

some more garlic olive oil

a splash of balsamic vinegar

salt and pepper

As a side note...I just realized this is my 100th post..yeah!

Happy Labor Day!  The weather keeps promising rain from Lee, but only a few light showers so far.  Did my outside grilling yesterday as I expect it to be rained out later today.  Glad to have the day home with the family.  Soccer starts this week, so add another crock-pot/easy/make-ahead meal to the mix.

Sunday - Hamburgers, grilled sweet potato wedges, corn

Monday - Spaghetti and meat sauce, salad, garlic bread

Tuesday - Crock-pot baked potatoes, topped Veggie Black Bean Chili, avocado, cheese, etc.

Wednesday - Mu Shu Chicken

Thursday - Crazy Pizza Bread (veggies-only), marinara sauce, veggies and dip

Friday - Island Ribs, Challah, Roasted cauliflower and garlic
