Rosh Hashana Menu Plan - 5777

Let me just give you a quick run-down of our menu for Rosh Hashana this year.  As with many holidays, this menu doesn't change all that much from year to year. You can check out one from a few year's past here.

The highlight of the menu and my favorite part is the Challah.  You can read about how I make my Yom Tov Challah here.

I'm listing all the recipes for both dinners and then for lunch that I plan on making.  They are not in any particular order as I'm not sure what I will exactly serve each day, but I know we will eat well! :)

When possible, I've tried to include any recipes from online sources (like right here on my blog or Food Network, etc.)  Thanks for checking out my blog.

Menu Plan Pesach 5776

I know I haven't posted much this past year, but I just finished typing up this year's menu for Pesach and I thought I would post it.  Ok, so I realize that the menu plan looks very similar to the one I posted last year.  Ahem.  Yes, it pretty much is the same with a few changes and tweaks.  This year we are fortunate to be going to a friend's house for the Second night, so I don't need to plan a menu although I'm sure we'll be bringing something along (?)  Also, a dilemma I face every year is packing school lunches for the kids.  Last year they wanted nothing to do with any type of matzo sandwich situation.  The solution was a vegetarian Matzo Ball Soup in Thermos containers.  I chose to make it veggie so that I could pack along some cheese or sweet treat that might have some dairy in it ;)    It worked last year, but that's no guarantee for this year, so I may need to wing it as we go.  Anyway, here it is and Happy Pesach! -

Oatmeal Sandwich Bread



Oatmeal Sandwich Bread 
(adapted from Better Homes &Gardens Bread Cookbook, 1970)

2 Packages dry yeast (4 1/2 tsp.)
1 cup quick cooking oats
1/2 cup brown sugar
1/3 cup vegetable oil
1 Tbs. salt
2 eggs, slightly beaten
6- 6 1/2 cups bread flour
egg wash: 1 egg white, beaten with 1 Tbs. water 
additional oats for topping

In a medium bowl, combine oats with 1 1/4 cups of boiling water, brown sugar, oil, and salt.  Stir to combine and allow to cool to lukewarm.  In the bowl of a stand mixer fitted with a dough hook or in a large mixing bowl by hand, combine yeast with 1/2 cup warm water.  Add the warm, not hot, oatmeal, beaten eggs, and 2 cups of flour to the yeast mixture and combine.  Continue adding flour gradually until a soft ball of dough forms.  Knead the dough on a floured surface or continue kneading by the mixer until smooth (about 5-10 minutes).  Place dough in a greased bowl and allow to rest, covered, until doubled in bulk (about 1-2 hours).  After first rising, remove the dough and divide in half.  Shape the loaves and place in to 2 greased 8 1/2 x 4 1/2 inch pans.  Cover the pans loosely and allow to rest (30 minutes to an hour).  Preheat oven to 375 degrees F.  Uncover loaves, brush the egg wash on the tops and sprinkle with a handful of oats.  Bake for about 40 minutes.  Allow loaves to completely cool on a rack before slicing.  Enjoy!
