Menu Plan Monday - 1/23/12

Menu Plan Monday -

Where does the week go?  I really did mean to post more recipes last week.  Clearly, did not happen.  I did make some time during this rainy weekend to do some cross-stitch.  I have two projects that I keep switching between and they both seem to be on the 10-year plan at this point.  I really do miss it.  I'm hoping to work that back in to my daily schedule...somewhere.

Sunday - For all the football watching around here:  Pretzel Dogs
I took a new picture.  Hopefully, this one doesn't look as "done" as the other one.  I may actually go back and revise the recipe a bit.  I baked these just a touch under 12 minutes (more like 11:30).  The pan of extra dough, with regular pretzels, needed the full 12.  Anyway, they were a hit as always.  It's always good when Publix has Hebrew National on sale!  :)

Monday - Meatloaf.  I just realized I need to take a picture of this. (mental note) Oven roasted potato fries, broccoli 

Tuesday - dance night - Crock Pot Baked Ravioli Casserole, crudite.  No picture of that one either...hmmm.

Wednesday - Leftovers.

Thursday - Homemade Pizza (did not make last week, we just ate lasagna leftovers).  Maybe if the weather holds, I'll get outside to grill the pizza...yum!

Friday - Polish Noodles with turkey sausage, Challah

Menu Plan Monday - 5/9/11

Last few weeks of school here.  The weather is supposed to be in the high 80's/90's, so I'm trying to keep the menu pretty simple.

Monday - Moroccan Meatballs - adapted from a "Biggest Loser Cookbook" recipe, and corn on the cob.

Tuesday - Pizza (yes, again).  Late night, so something quick.  Love this recipe from Martha Stewart for Whole Wheat Pizza Dough.  I'll freeze half for another night, too!

Wednesday - Breakfast for dinner.  Hope to make a big batch and pack some away in the freezer.

Thusday - Pretzel Dogs






Friday - Island Beef Ribs

Pretzel Dogs

Have you noticed pretzel everything these days?  Pretzel bagels, pretzel hamburger buns...pretzel dogs?  I reworked a pretzel recipe I had to make these pretzel-wrapped hot dogs.  Everybody loved them here, so I thought I'd share the recipe. 


Pretzel Dogs
The original recipe is for "Soft-Ball Pretzels" from Paula Deen.

Ingredients


1 cup warm water (about 98 degrees F)

1 package active dry yeast

2 3/4 cups all-purpose flour, sifted

2 tablespoons margarine, softened

1/2 teaspoon salt

1 tablespoon sugar

4 cups water

2 Tbs. baking soda

Kosher salt  or pretzel salt

One package Hot Dogs ( I used Hebrew National, which only has 7 per package)

Directions

In the bowl of a stand mixer, combine warm water and yeast. When the yeast dissolves, add half of the flour, the margarine, salt, and sugar and mix  with dough hook for about 3 minutes. Add in the remaining flour. Continue kneading dough in mixer or turn dough out onto a floured surface and knead until the dough is no longer sticky. Let the dough rise in a greased, covered bowl until it doubles in size, about 45 to 50 minutes. Punch down the dough and divide into 12 pieces. Roll each piece of dough into 18-inch long ropes. Wrap the rope around the hot dog, making sure that the ends are secured.  Place on a parchment-lined cookie sheet.  Any remaining ropes of dough can be shaped into pretzels. Let rise again until almost doubled, about 30 minutes.

Preheat oven to 475 degrees F.
In a large non-aluminum Dutch oven over high heat, bring 4 cups of water and baking soda to a boil. Using a large spoon, gently lower pretzels into water a few at a time and boil for about 1 minute, or until they float. Return the pretzels to the cookie sheet and sprinkle with kosher salt or pretzel salt.   Bake until browned, about 12 minutes.
