Pesach Menu 5777

I know I don't post here often, but I thought I would post our menu for this Passover.  Basically, it's just a reshuffling of the menu from the previous years.  If it's not broke though, right?  Happy Passover!

I finally typed up the menu.   I'm posting this now before the craziness of actually cooking and baking has started.  I'm sure there is something I forget.  Blogger is giving me issues tonight and not letting me add pictures as I want to, so I'm giving up for now.  I know there aren't a ton of links to recipes, but I think most are pretty simple and straightforward.  If you are curious about anything on our menu, please let me know.  Happy Pesach!

Rainbow Cookies...again



A couple of years ago was my first attempt for these Kosher for Passover Rainbow cookies.   Boy, these are really good.  It may not look like it makes a lot, but these bars each get sliced up.  A small piece goes a long way in flavor.  Although the recipe is not particularly difficult, it does require time and multiple steps.  I didn't even get to make them last year because I ran out of time (and energy).  This year, I decided I needed to make them first lest they not get done at all.  The picture above is the final step of coating the layers in chocolate.  They do freeze very well, although I am not a master at tempering chocolate so most likely a "bloom" will appear if I freeze them.  Oh, well.  The kids have already sampled the trimmings and extra chocolate and have given approval to the recipe.  Still waiting for the chocolate to set.  I will try to take a better picture of the final product all sliced up.

Tuesday - Pizza!!!

Wednesday - not sure, perhaps grilled lemon-thyme chicken

Thursday - Pasta, with marinara sauce

Friday -  again, not sure, may take the kids to an event at the college.

Why does it seem like I'm cooking for 40 and not just 4?  I guess it's a good thing we like leftovers!  Still need to do a bunch of cooking today and a bit more tomorrow, but the rest of the week should be fairly easy.

Monday - First Seder

Hard boiled eggs with salted water

Gefilte Fish (for B) and Mock Chopped Liver (for me)

Haroset

(minus the raisins and nuts)

Rainbow Cookies

Okay, so here is my "new" recipe for this Passover.  My only real adaptations are that I made it with parve margarine instead of the butter, substituted vanilla sugar for the extract.  Also, I couldn't find Kosher-for-Passover almond paste, so I made my own.

Almond Paste (Adapted from an Epicurious recipe)  Makes 1 1/2 c.
1 1/2 cups whole, blanched almonds
1 2/3 c. confectioner's sugar (or equal amount granulated sugar pulsed with 2 Tbs. potato starch)
1/4 c. egg whites

If making for Passover, create the powdered sugar first in the food processor.   Add almonds and grind to a fine powder.  Add egg whites and pulse until a ball forms.  May add a tsp. of almond extract (or flavoring) for a more intense almond taste.  Turn out ball onto a piece of parchment paper.  Form into a log and wrap in paper.  May be refrigerated for a week or frozen at this point.

Rainbow cookies after the layers have cooled, been stacked and pressed for 24 hours.


Cookies after they are cut into lengths and spread with apricot glaze.


After the glaze sets, melted chocolate gets spread over them.
