Menu Plan Monday - 4/25/11

Monday - Roasted Chicken, Mango Salad, leftover sweet potatoes

Tuesday - Pizza!!!

Wednesday - not sure, perhaps grilled lemon-thyme chicken

Thursday - Pasta, with marinara sauce

Friday -  again, not sure, may take the kids to an event at the college.

Menu Plan Monday - Pesach Edition

Why does it seem like I'm cooking for 40 and not just 4?  I guess it's a good thing we like leftovers!  Still need to do a bunch of cooking today and a bit more tomorrow, but the rest of the week should be fairly easy.

Monday - First Seder

Hard boiled eggs with salted water

Gefilte Fish (for B) and Mock Chopped Liver (for me)

Haroset

Cranberry Conserve
(minus the raisins and nuts)

Matzo Ball Soup


Mock Chopped Liver
Turkey
Potato Souffle with Carmelized Onions and Mushrooms
 
Potato Souffle

Vegetable Kugel

Steamed Asparagus

And...Brownies and Coconut Macaroons


Tuesday Night - Second  Seder

Aunt Babe's Brisket

And Passover Fruit Crisp (making it parve)

Thursday - Leftover Brisket, etc.

Friday - Matzo Pizza or Matzo Lasagna?

Also, I need to figure out lunches to pack for school..probably Farfel and Cheese, yogurt, fruit.  Not sure if I will be adventurous as last year's experiment - Rainbow Cookies, but I may try out a few more recipes throughout the week.

Busy week coming up, just trying to keep it simple.  Working on menus for the Seders next week.  Basic plan for the week:

Monday  - Grilled Chicken and Asparagus


Tuesday - Pizza

Wednesday - Thai Lettuce Wraps (with leftover grilled chicken)

Thursday - Fish Tacos


Friday - Spaghetti and Meatballs

Menu Plan Monday  - 4/4/11

Spring Break has arrived for Miss D and Mom's visiting the end of the week, so the plan may change as we go through the week.

Monday -  Korean BBQ Beef Ribs (I'm using this recipe for the sauce) with rice and veggies.  If the weather stays nice, maybe I'll throw them on the grill, instead of the oven!

Tuesday - Turkey Burgers


Wednesday - Fish Tacos


Thursday - Eggplant Parm. (hope I can find some good eggplant) -Mom's request

Monday - all-day event at Miss D's school - Spaghetti and Meatballs (meatballs from the freezer, marinara in the fridge) - easy and done!

Purim Gifts


The baking is done and the gifts have gone out.  Here are a few pictures.  Happy Purim!

 

Funfetti Hamantaschen



The other day I saw this post from Mommzy at A Jewish Homeschool Blog for Hamantaschen using a box of cake mix and I immediately pondered the contents of my pantry.  I wasn't sure if the Funfetti mix would work as well as the yellow cake mix described in the original recipe, but I really think the cookies came out great!  Besides, the kids think anything with sprinkles is just a little more special, and I agree with them!  I used up the remaining of my apricot and raspberry filling from the more traditional recipe I baked up the other day and even filled a few with chunks of white chocolate.
